The country Croatia keeps for itself, away from the coast.
Inland Croatia is the half nobody photographs. Zagorje rolls north of Zagreb in green hills stitched with vineyards, castle lakes and farmhouse kitchens that pour rakija before you have finished saying no. Slavonia runs flat and east toward the Drava and Danube, paprika country, river fish, plum orchards behind every village house. In between sits the capital, where you can eat štrukli in a courtyard below the Cathedral at La Štruk, the savoury and the sweet, made to order while you wait. This region rewards the traveller who is in no hurry: the one who books two nights with a family on the land, lets a winemaker open one more bottle, walks a baroque citadel at dusk. One pastry, made two ways. The savoury štrukli arrives bubbling in its dish, thin sheets of dough folded over fresh cheese and baked until the top blisters gold; the sweet version comes warm, almost a dessert and almost not. The kitchen has done nothing else for over a decade, which is the point. You sit in a small courtyard a short walk below the Cathedral, order one of each, and understand why Zagreb grandmothers guard their own recipes. Each portion is made to order, so expect a short wait. Come hungry but not starving. This is a plate, not a feast.
